You can use all those apps, just you have to rely on the built-in analogue
minijacks on the motherboard for importing and playing back audio to an
external source.
A G4 with PCI slots would allow you to add a better sound card with more
input channels and stuff like that. For home use an iMac is fine. There are
plenty of adapters from RadioShck that will let your iMac import and export
to almost any source you need. There are also plenty of USB to MIDI adapters
and software if you're into that kind of stuff also.
