I used a 9.1 cd i had - not sure if it's from the X bundle, but have just
tried the install again using that 9.1 on a cube and it works fine.

good point, but i still don't see why the cd won't even show up at startup
when i hold down the option key (this also works fine on the cube - up pops
the cd + all my partitions)

not even getting that far - see above...

i'm starting to suspect the cd drive in the g4 may just be being funny -
presumably the firmware upgrade allows the g4 to use a X startup cd??
