depends on what you want to do but i've been using a wicked app called felt
tip soundstudio. very cheep, very stable, and lets you do recording, editing
and basic filters (fade in/ out delay echo ect)

download a copy off pro tools free and set up oms midi and you gotta simple
work station. everything will sound like a bontempi keyboard if you use
quicktime musical instruments but it's really good fun!

the only other thing i use at the mo is virtual drummer. really simple to
use and exports midi files that can be imported by protools!
