Is someone offering to sell you a particular G4?  If you want folks in the
list to compare that model with another or with your G3, ask away.
Otherwise, your questions beg for a magazine article or two and for a review
of several web sites with such information.

Macworld magazine articles and web site do the same kind of thing.

A few thoughts:  you need to analyse what you need and then analyse what you
want.  Ask yourself why your G3 needs to be replaced.  All G4s have Altevec,
that's what make a G3 into a G4.  Dual processor is great if speed in some
applications is critical, so that's not for you.  Motherboards are
different, so are the G4 chips between models, but you should not care about
that if all you want to do is just run the machine.

For stability, someone here will cut me off at the knees if I'm wrong, but I
believe all G4s are just about equal.  Pay attention to Kyle Hansen and a
few others on this list if they weigh in.

People have stability issues mostly because of a particular combination of
OS, the set of extensions they keep active, applications, add-on cards, and
peripheral devices.  Once you have a particular configuration in mind, tell
the list and ask for recommendations on the best OS for you and comments on
your devices.

And note this, for some models, there has been a firmware upgrade(s)
required.  I suspect some of this is needed before using the more recent OS
versions.
