I've got a Matrox video card in my 266G3 desktop but can't move up to OSX until I replace it (can't live without my 2048x768 screen). One suggestion has been to simply duplicate the existing card as I know it works with X and they are available for reasonable prices.
MacTracker notes that the G3s came with ATI Rage IIc or Rage Pro cards, 2-6MB video memory.
