Your Beige G3/266 DT is apparently a Rev. 2 or 3 (most likely a Rev. 3).

You can support four total drives of (almost) any type, and all hard drives, 
including SOME but not all demountable hard drives, will be bootable.

A full-blown (from the factory) G3/266 DT includes:

1) standard hard drive, EIDE Bus 0, Master,

2) standard CD-ROM drive, EIDE Bus 1, Master, and

3) optional Zip drive, EIDE Bus 1, Slave.

Because of certain restrictions, Apple does not provide a cable which 
supports BOTH Bus 0 Master and Bus 0 Slave.

Such cables are often available on eBay. Look for description "Beige G3 
Master/Slave Hard Drive Upgrade".

If the CD-ROM is replaced by certain Panasonic EIDE CD-R/Ws (the model 
numbers escape me right now), then the CD-R/W will also be bootable, and 
usable for almost all applications, including, but not limited to AppleCD 
Audio Player, and Toast.
