since the adoption of the first ppc, the 601, macs have been using risc processors, the 68k series were some of the last cisc processors, other than the increasingly grotesque x68 family. very few people can program assembly for risc machines effectively, generally a c compiler is written with a minimal os and then a real os (and likely a better c compiler) are written in c and all later work is done in c or a similar high level language.
