Possibly this is like the settings in old versions of Eudora for attachments, where you had a choice of MIME (more universal) or Apple Double (for Mac files). A third method of encoding is UU which isn't used so much now. With text it isn't so much of an issue, except if you use 8-bit ASCII, where the characters for curly quotes, dashes and accented characters, etc are different and may come through as gibberish on the other platform.
