I don tknow what "you're doing wrong" but please if you figure it out let me know! i did the same thing as you I just installed it, I didnt change any settings or throw anything out or add anything cept the drivers for my radeon 7000...

Been running all day, no snags, no unstability. Toasted a CD while surfing and listening to mp3s from the net, and printing to networked laser printer. Slowed down of course, but didn't hickup or spit. Downloaded and installed all the necessary updates and also RagTime beta for Jag, all at the same time while finishing a contract bid in the WP. No hickups, no spitting.
