You can.  Using a 7200 rpm drive in the FW case is recommended.  I have a
client that is a digital video segment review editor at Pixar, and he
captures all the files he creates and edits on a few Firewire External
Drives on his G4.  Another client creates and edits all of Wells Fargo's
local TV commercials and he uses FW drives as well.

I'm not a video master or anything, but I know it can be done.
