Yes. A G3 ZIF from a Blue & White is no different than one of the same 
speed from a Beige. Take care that the heat sink is attached properly, 
using just the right amount of a good quality thermal grease where the 
actual processor contacts the sink. There are OS 9 utilities to measure 
G3 processor temps if you want reassurance.
