File --> New --> <whatever you want> Then just close the open word processor screen if you don't need it.
Overall, though, OpenOffice is bulky, ugly, and totally lacking the elegance of Office v.X. It (StarOffice) was great when it was the only real option for Linux and Sun OS, but using OpenOffice on X11 on Mac OS X is kind of like flying to China on the Wright Brothers' first plane. (OK, so I exaggerate!) Then again, as a starving graduate student, I totally understand not being able to afford Office v.X.
