Generally IMAP is just as unsecure as POP -- but good IMAP servers offer a
SSL encrypted access (or even enforce SSL encryption for IMAP access as a
research center where I happen to work does). Then the transmission of
user/passwd al well as content *is* encrypted.
A dead giveaway is a https://.... up front. How good the encryption is
depends on many things, but netscape and opera have a nice little lock symbol
which tell on click what exactly is going on behind the scene (like 128bit
key length or less).
SSL-IMAP uses a different port to connect (easily configureable in a firewall) while I've not heard about SSL-pop servers.

Then if hotmail offers SSL I've no idea as I happen to use a different mail access. I stopped using yahoo as an emergency account the day they changed their POP access and privacy policy in a way I didn't fancy much.
