Generally IMAP is just as unsecure as POP -- but good IMAP servers offer a SSL encrypted access (or even enforce SSL encryption for IMAP access as a research center where I happen to work does). Then the transmission of user/passwd al well as content *is* encrypted. A dead giveaway is a https://.... up front. How good the encryption is depends on many things, but netscape and opera have a nice little lock symbol which tell on click what exactly is going on behind the scene (like 128bit key length or less).
