Hi Alan Epson seem to be notoriously slow at getting OS X PPD's out for their printers, a girl who works with me had to wait almost 6 months for an OS X compatible PPD and in that time she had upgraded to 10.2.5 and when it came out it said it was only compatible with OS X upto 10.2.4. Sickening really.
I don't think you will get anything out of the printer at all without proper PPD's for OS X. I have had an obscene amount of printing difficulties lately as we bought a new Canon CLC with Fiery Rip and that really didn't want to play well with cross platform jiggery pokery. Patience is a virtue, but with Panther just around the corner can we really afford to be waiting on lacksidaisical 3rd party suppliers to support us 6 months after the release of a new product? However you can get it working through the use of the UNIX CUPS system and Gimp Print Available at the link below. Its gonna mean messing about under the bonnet but they claim that support for Epson Stylus Color 680 is FULLY Operational. http://gimp-print.sourceforge.net/ Hope this helps.
