Can someone give me a quick idea of how to tweak the Beige motherboard's jumpers to get the best performance out of this? I'd like to get as close to the 350MHz rating as I can, but I have no idea how stable the various high bus speeds are likely to be. I'd hate to sell off a slightly dodgy machine to anyone.

Just play around with the settings. From reports I have heard,
I have not just heard, but have a BGE 233 Rev. A computer that I made several changes to. First, I changed the Rev. A ROM to a Rev. C rom so that I could use Slave ATA drives . I also dropped in a 400 Mhz. Ziff processor from a B&W that was upgraded to a G4. I clocked it to 414 Mhz and it has ran that way for over 2 years now with zero problems. I also maxed out the RAM to 768 MB and put in two 60 GB Maxtor drives and a Sony Atapi CD-rw drive. It has run on all versions of OSX all the way up to and including 10.2.8 presently with no problems. ( I might add that I did wait to install 10.2.8, until it had been corrected first. )
