Can you open her students' Mac docs in Office X on your Mac? Also, have the students send the docs stuffed in a .zip archive. Get the free stuffit s/w. It can stuff in .sit or .zip; or the PC folks can use WinZip. It may be something the mail server is doing to the docs as it passes through. Seen this type of thing before...
