I had X11 running on Jaguar with Open Office.
I beleive there is also X Darwin (or something like that) which works just the same as X11.

They had a beta for Jaguar for awhile, but once Panther arrived it became a strictly Panther only app. You can probably use Fink to install Open Office and use a different X Window manager.
