What has to be done to blow away panther and go back to an older version of
the OS? I mean sometimes older versions of some OS's (that start with "w")
won't recognize or wipe out the partition that the newer version is
installed on. So you have to start an installation with the new OS, blow
away the partition, then shut it down and start the installation with the
older OS. Would I have to do all of this or is there a better/easier way?

I think she really wants panther, but I'll ask to make sure.

It will run in "Classic Mode", meaning emulated OS 9, which on a G3 233
iMac will be painfully slow. Is she (or you) a student? AppleWorks 6
is only $39 for students, and makes a great word processor in either OS
9 or X.

Of course, another option is to put 8.6 or 9 on that iMac and it will
not only run Mac Office 98 well, but will magically turn from a slug
into a speed demon.
