You're right that you will need a PCI SCSI controller card to access your
hard drives.  Take a look at Adaptec, Sonnet, or ACARD and see what they
offer.  Make sure the card allows you to boot off your hard drives.

As for the ZIP and JAZ drives, I'm guessing they're both 3.5"?  The B&W will
only take one 5.25" CD/DVD drive and one 3.5" floppy type drive.  You're
going to have to choose between the Zip or Jaz and maybe look for an
external case for the other.  You will need a PCI 50-pin SCSI controller
card in order to use your SCSI Zip or Jaz drive.

As for your CDR I'd go buy an ATA CDRW  that will be much faster and way
cheaper than your current one.  CDRW's have gone way under $100 these past
few years.
