I just did this today. I installed a Yamaha F-1 drive in a Beige G3 running OS 10.2.8. I used Disc Burner to burn a data disk. You just stick the blank disk in the drive and a dialog pops up asking you what to do with it. If you give it a name and open it with Finder a CD-ROM ICON then shows up on the desktop to which you can drag files. When you are done just select "Burn..." (Something like that) from the menus.

Oddly to erase a CDRW you have to use Disk Utility.

My drive worked without doing anything fancy, I don't know how many drives OS X supports so YMMV.
