I have been thinking about replacing my 9g SCSI HD in my G3/333 MT.
Don't replace, add. Do something like using the existing drive as your system and scratch space, and the new drive for your data.

This drive looks fine. Good deal; it's pretty close to my currently preferred price-point for SCSI devices: $1/GB.
Will my machine achieve anywhere close to 80MB/s?
Not on the built-in SCSI bus, which is limited to 10 MB/sec.
Do I need a new SCSI card or will a 80-pin SCA to 50-pin adapter do?
An SCA Adapter will work just fine. Unless you want the higher throughput - in which case you'll need a F/W SCSI card and the 68-pin vers of the Adapter.
