I have a similar model (G3 300MHz, 192RAM).  I bought a set of OS 10.2 disks 
off eBay, threw out the 6GB drive and stuck a 40GB WD in its place.  10.2 
installed easily.  I did try with 10.3 but had no success.  Good luck!
