Concerning OS X, like others I'm running 10.2.8 on a 5-year-old B&W G3. It's great. It recognizes my no-name USB/Firewire combo card along with an Adaptec 2930 SCSI card. I'm looking forward to getting all-OS X-compatible software so I won't have to fool with Classic.
Remove the stuff they told you to, Tom, and put it back one at a time. It's not that hard and you'll probably find the source of your frustrations. It will be worth it.
