Does OSX have some issues with SCSI? I've thought about buying a large SCSI drive to install it on, but I didn't know how well it would work.
None that I ever encountered. I ran 10.2.6 on my old PTP and that was all SCSI. I have an Adaptec SCSI card in my MDD supporting two external HD's and it runs fine under 10.3.4. Not all SCSI cards are supported under OS X. Just be sure to check the manufacturers web site for any card you are looking at buying.
