Yes ADB works just fine with S-Video. The reverse isn't necessarily true however.

I don't recommend using an ADB KVM. ADB wasn't designed for hot plugging. There is some chance for damage, even with a T-switch. And switching it back and forth WILL mess up things in software. I don't recall what happens with the keyboard but the mouse tends to slow down.
