Hey Brian, I took a look at my dead G3 and noticed that one of the IDE slots is used by the CD. Sorry, I was thinking these machines came with a SCSI CD drive. I was thinking of another computer.
So unless you have a PCI ATA controller card, there is no way to have 2 hard drives and the CD on a Rev 1 motherboard.
