I finally was able to successfully install Yellow Dog Linux on my B&W G3. Seems I never could get it to work on my beige G3 at all. The install would go so far and stop each time I tried it. Of course a different boot manager is required for old world machines like the beige so perhaps that was the reason. Took some time to configure the right-click on here though, finally settled on the F11 key. Also had some problems with permissions writing to my server drives, but I think I have those worked out. Seems to run pretty smoothly so far, nice to have another OS to choose from.
