Although I can't tell you from experiance, I'm fairly certain that you can't chop off the numeric keypad and still have a functioning unit. They are pretty tightly integrated and IIRC only have the one controller chip to handle both sets of keys. You might be able too, so long as you reconect the traces that would have wound back around to the mainboard.
Personally, I would look into getting one of the keyboards that came with the early Performas or the LC I/II/or III.
