Graphite is a description of the case. It's to help differentiate between the later models and the Sawtooth and Yikes models.
Graphite actually encompasses two models. The 'Yikes' and the 'Sawtooth'.
Both were the first generation of G4 towers. The Yikes was the low end model that basically was a Blue&White G3 motherboard in the graphite case with a G4 chip installed.
The Sawtooth was a completely new machine (I would say it was the second generation of G4, except it and the YIkes were released in tandem.) Most notable about this model was:
1.) First Mac to use an AGP slot for a video card instead of onboard or PCI.
2.) First tower with the Airport slot and built in antenna.
3.) Used a different socket for the processor than the Yikes/B&W/BeigeG3.
