You mentioned that you have two SCSI buses. You might take a look at this page:

From that I think you'll see why you have that SCSI card. I have a couple of Beige G3s with IDE drives. That SCSI card and drive is really noticeably faster.
Look at the profiler again. If it says you have a "Apple53C875Card" then you really have an ATTO ExpressPCI PSC card. I was having some problems in Jaguar and particularly Panther (with XPostfacto), until I discovered that the firmware and drivers needed to be upgraded from the Apple OEM to ATTO's. Here is a site that tells you how to do it and the ATTO site for the updated firmware and drivers.

I know this really doesn't answer you question about the scanner. I can't really help you there. If Vuescan won't work, then you're probably stuck in classic.

The scanner used to work, and works perfectly on Windows. I'm wondering if
there is some extension that may have clicked off. I know I checked the OS
9.2 extensions yesterday and the one for 'scanner' was off but I turned it
on again. I will try to boot it into 9.2 without running it in the shell
inside 10.2 and see if that works.
Secondly, I guess this means there are two SCSI buses, or whatever they are

terminated so I'll have to figure out how to unterminate it. Could this be a
software termination? Doesn't make sense though since it used to work. If
anyone has any great insights, that would be great.
SANE seems to work with Panther, not Jaguar but I might give it a try when
the computer sees the scanner.
