The VST/UltraTek (UATA/66) is the most compatible with pre-OS X Macs, but
it has a firmware updater for OS X available from OWC. Don't install that
upate unless you do run OS X. Limited to 120 GB.

ACARD's cards are "cross platform" (Mac and PC, but using different
firmware for each one) and generally have the better firmware support.
Limited to 120 GB except in the UATA/133 versions (AEC-6880M ?).

If you want the best single drive solution for a SCSI-based Mac, then get
an ACARD SCSIDE "bridge". These have 48-bit LBA support, necessary for
drives larger than 120 GB, and are available in F-SCSI, UW-SCSI, and
LVD/SE-SCSI models. For the 8600, you would want the N-SCSI version.
