I have used Zip-drives (SCSI-connected) with lots of older Macs, and never noticed extension conflicts. SCSI Probe works fine with them.
BUT: for some weird reason, it mattered where in my SCSI-chain the Zip was attached. Can't remember where anymore, but I suggest you try it in different places.
Also, you have checked that SCSI ID-number and termination is right?
