Well, since the default behaviour in OS X mail app and Entourage v.X and Entourage 2004 is to place the text at the beginning of the message (yes, you can change it) AND since I'd much rather read a response than the initial post (which I've already read) I guess I'll just continue as I'm doing. Feel free to ignore me.
