Old school, the following was true (if I understand correctly) - LocalTalk = AppleTalk over serial - EtherTalk = AppleTalk over Ethernet - TokenTalk = AppleTalk over Token Ring

Yes. In OS X you can have IP active over many interfaces simultaneously. You can only have AppleTalk active on a single interface.
AppleTalk and IP sit at equal levels in the networking hierarchy. They are two distinct ways of doing things. But since AppleTalk has a simpler configuration and is being phased out to boot it gets fairly minimal listing in the Network preference pane.
