2. Currently the old drive is still in the machine, but just disconnected. This is because the screw that holds the mounting plate down is so shredded that I have not been able to get it out.

I've tried taking locking needle nose pliers to it, but I can't get it
to work. The head of the screw is nearly flush and further there is a
slight indentation around the screw making it even harder to get a grip
on the screw. I finally just gave up and accepted that I'd have only
two mounting spots for drives. If anybody has any suggestions on how I
might get that screw out, I'm all ears.<snip>

It's a little bitty screw, isn't it? Just get a drill bit the same size as the diameter of the screw and drill through the head until the screw lets go. A magnet nearby can catch the shavings. Not a big deal.
