300 or 333 was the biggest AFAIK. The processor on this model plugs into a ZIF (Zero Insertion Force) socket. This has a lever that when moved releases all the pins so you can plug in or remove the processor without any force, hence the name. Daughter cards were used in the earlier numbered PCI Macs (7200-9600). This had the processor and associated circuitry on a separate circuit board. They both do pretty much the same thing but are not compatible (although there is a daughter board that will take a ZIF processor, it's a third party product. ----------
I think you're right about Desktops topping out at 333 (I know there were 333 MT's), but I think there was a limited run of 366 MHz MT's just before the introduction of the B&W.
XLR8 (now owned by Daystar - http://www.xlr8.com/) and PowerLogix were the two main vendors of Carrier cards for using ZIFs in PowerSurge Macs. Most folks don't know that NewerTech also made a few carrier cards, and the "New" NewerTech (now partners with OWC - http://eshop.macsales.com/) appears to be trying to revive that product line.
