Yes it is indeed easy, I know some guys who did it themselves already and upgraded the memory to 1GB.

To open the Mac mini you need a putty knife, or the smallest tool with which you scrape of the wallpaper on you wall, I don't know the exact name, some say you can even use a credit card...

BTW Apple states that as long as you do not BREAK your Mac Mini while working on the inside, it is still covered under warranty.
