Troy, go to users-your name folder-then just copy: Documents, Music, Movies and Pictures folders to the new destination.
Erase the originals, then make symbolic links to the new location by going to the terminal.
1) type sudo ln -s (do not type enter yet)
2) Drag and drop new Documents folder to the terminal window.
3) type ~/ then hit enter
repeat 1-3 for Music, Movies & Pictures.
