A scanned photo at 600 ppi looks great on my monitor with the colors
correct, etc. But, when I print it from either Preview, iPhoto or
Elements, the colors are off and the shadows are enhanced. How do I
correct this? I've tried reseting my Epson Stylus Photo RX500 and
attempted to calibrate the monitor.

This looks like a ColorSync issue between the printer and what you see on your monitor.

To understand more of what you need to know about settings, perhaps it would be in your best interests to read the ColorSync PDF. Developer folder -> Documentation -> Graphics Imaging -> Conceptual -> Managing ColorSync -> ColorSync PDF.

Some of it might be over your head, but perhaps you can get an idea of what settings to use. The Epson software docs should also help guide you through the ColorSync stuff.

All the best,
Ken N.
