With the PS2 keyboard you can remap them in the preferences. Just for fun, I picked up an ancient IBM keyboard at a university surplus auction, vintage PC XT or earlier. It doesn't even have a windows key or an option key, just Control and Alt. Since I only really use the Command key, and to the lesser extent the Option key, I changed the mapping of alt (it's next to the space bar) to command and the control to option. Works good for me. And I love the touch.

The command key on the Mac maps to the Windows key on the PC keyboard. All the keys are there it's just that the command/option combo is swapped around. So you hold down the Windows key-s to get into Single-user mode.
