If all that was/is on the HD is Ubuntu, then perhaps the restore CD doesn't like the driver on the HD (it's not OS X's HFS+ driver), and/or its sector layout (*). So try re-initializing the drive first.

(*) Not sure about Ubuntu specifically, but the default for many *nix flavours is to use 2 KB sectors, whereas Apple uses 512 KB for HFS+.
