FWIW, I put the 120GB from my beige G3 with 10.2.8 into my DA and have  
done archive and installs with every OS up to 10.5. 10.3 and 10.4 were  
performed with a QS 933MHz processor in my DA and 10.5 was with a dual  
1.2 from OWC installed. Unless my memory is failing me completely (and  
with 4 ales at the Renaissance Festival today and hitting 50 in 3  
weeks you never know), I have not had any install issues.

I have never disconnected any drive controller card (Acard 133 ide in  
10.2, 3 and 4 and a Seritek SATA in 10.5) or any other driveconnected  
to the MB or one of the cards for any install.

I see no reason to unplug any add on drives. As long as I was doing an  
install, I might take an additional 30 minutes and install a backup OS  
on one of the other drives that has copies of any utilities you may  
need in case of an emergency.
