For e-mail, your copy and replace idea may not work.  And if Migration  
Assistant does not work for you, go to this old thread:

With Panther on my QuickSilver G4/733MHz, Migration Assistant never  
worked going into a G4 iBook running Tiger and our Aluminum Intel iMac  
running Leopard.  But that may have been a Panther incompatibility  
rather than the machine.  I had to physically copy the Mail folder to  
the new machines' desktops and then have the new machines' Mail  
application import from that folder.
