In about a year my wife and I are moving to mexico for a bit. Not sure if have a PC and a Mac will be very portable. Also, I checked out Pystar machines. I like what they want to do. But psystar has no iLife support and I am not sure how their customer service is regardless of the price. I think the mini will work fine. Another way to proceed is to buy a cheap Windows box to run your 2 apps, you can connect it to your huge LCD. You can connect a mini or any Mac to the same LCD.
