My Google Fu finally kicked in, and I found this, couldn't be simpler:

sudo nvram boot-command="multi-boot"

"Multi-boot" was the keyword that got it. Using the word "option" was  
just frontloading all my results with 4,567,789 hits on holding down  
the damned option key to boot :-)

I KNEW it was out there somewhere!
