When you use the "Option" key boot at startup is the OS 9 partition  
offered as bootable?

If you hold the "9" key at startup it should also boot any bootable OS  
9 system.

If neither of these work, it could possibly be the OS 9 system is  
missing something for the System file (the equivalent of an old  
"enabler" which is now inside the System file), this is a problem with  
the MDD, but I never heard of the Gigabit needing anything special.

There's also the issue of whether the OS 9 system is "blessed". When  
you look at the OS 9 System folder while booted in OS X it should have  
a "9" on the folder as an icon if the system is blessed properly, and  
if it is NOT blessed, it will be a plain, generic folder. If it's not  
blessed, you'll need to get it blessed. Sometimes that's as simple as  
dragging the System file and Finder file outside the System folder and  
then dropping them back in again. Otherwise, you may need to look up  
instructions for blessing an OS 9 system.

Also, the fact that the whole HD isn't shown in the OS 9 installer CD  
seems to indicate a real issue with either having the correct OS 9  
drivers, or perhaps a jumper conflict when you transfered the HD?
