HI,
Actually, a game pad controller would be just fine in my book for the 
kickboxing game. I am not too sure about the whole mouse combo thing. Played 
a game which used a mouse for fighting called die by the sword, and while it 
was interesting, most everyone I knew used the basic joystick or gamepad 
controls for the game.

I also say number 3! It could be very cool if you can make the game in
surround sound.

It would also be cool with a fighting game, but I think these types of games
must be controled by the keyboard. Not the mouse.
