Well, actually 41 is pretty good for starting stamina. Your melee is a bit low though. THat would explain the difficulty of encounters. As for the experience you have, definitely use it to train skills, but also buy runes of life if you don't have any. When training, try to increase your weaponry skills some if you have them, as you'll get a melee increase for every ten levels of weaponry and every ten levels of a weaponry subclass if you use that type of weapon. Weaponry slashing, for instance, will give you an extra melee point every ten levels if you're using swords. Hope that helps a little.
