For what it's worth, I like the sound of walking the platforms as it is.  I 
agree with you that walking on sand and dirt and, for that matter stepping 
onto a crumbling ledge, won't give echoing sounds.  What is Panamaw Joe 
wearing on his feet, anyway?  This, too, would direct how steps should sound 
where it does make a difference.
